Does anyone know if a recipe that goes into a 13x9 inch pan would fit into 1 or 2 9x5 loaf pans?

It'll fit, but it'll be a little thicker. That may affect cooking time. Being thicker would be OK from the point of view of possible overflow because the loaf pans are 2 or 3 times as deep as your average 13x9 pan, but depending on what it is, it may not be acceptable for the recipe (for example, bar cookies may not cook properly if they're thicker than intended, but lasagna would probably be OK).

Oh yeah, and that would be TWO loaf pans, not one.
