You could just marinate it for less time, but I think ipsedixit nailed it with the dilution.

The octopus is already in it. I put lemon juice, evoo, garlic, s and p, cilantro and oregano. My dh cooked some up and said it was too sour from the lemon juice. I was looking for a way to salvage the rest. I was just making the marinade w/o a recipe. I was going for something that you would get as a warm appetizer at a greek restaurant. ANy recipes for future use would be greatly appreciated. Thanks.

It's still marinating. LOL. I just never got around to grilling it after my dh told me that is was sour, I lost interest bec I did not know how to fix it. So I guess it is ceviche. HA HA. we'll see what happens. I am working today so I won't get around to it til tomorrow.
Emme, I like your idea of soup. Perhaps someone has a recipe for a soup with sour overmarinated octopus?!?!?! LOL.
Anyway, I got the octopus on sale and was just trying to experiment.

At this point it won't be very good as it's been marinating for days. If you do ceviche, it really should only marinate for a couple of hours at the most. I'd throw it away and chalk it up to a lesson learned, though you could always try it in hopes that it wouldn't be too bad, but citric acid + seafood + days = not very good IMHO.
