Zuni Preserved Tuna

I tried several searches and read through the COTM boards and didn't see any reports on this, so apologies if I missed a bunch.

I tried this recipe several (7?) years ago and wasn't thrilled with the results, however something about it has stuck in my head. Also frozen yellowfin is cheaper by the pound then decent canned tuna around here so I thought I would try again. I will admit my skill level has improved since the last time, but I was wondering if anyone has any tips before I play fast and loose with $15 of tuna.

I promise I'll report back if anyone has any tips.
