I am looking for a recipe for papatelle biscotti, usually made with honey and almonds. My wife and I go to Venieros in NY and love their biscotti and would love to find a recipe for my favorite Papatelle. usally darker then the other biscotti, any help would be great.

I never heard of these before but since no one has responded here are a couple of recipes to get you started.

Google piparelli also for additional results. They are very similar to what you want.

I've enjoyed these homemade by a family from Abruzzo and seen them made. The secret ingredient is black pepper. The trick to making them is that you have to remove the biscotti loaf hot and still somewhat soft so you can slice them into individual biscotti and then you crisp them up in the oven a bit. When done, the ones I enjoyed are rock hard at room temp. Here is the recipe I obtained:
1 orange rind grated, 1 package vanilla sugar, 2 square pieces semisweet chocolate, 1 1/2 tbsp Nestle's Quick, 1 lb whole almonds, 2 1/2 lb honey, 1/2 tbsp black pepper, 3 cups whole wheat flour, 4 cups all purpose flour.
Buy almonds with skin. Boil in water. Remove skin. Roast 2 hours at 200F until slightly different in colour.
Put flour on board. Melt all other ingredients in pot until well mixed. Add to flour. Roll into shape. Bake and cut while still hot.
