what to go under cream cheese icing

tritecliche Aug 16, 2010 02:24 PM

I have a craving for cream cheese frosting, but feel fairly uninspired for a cake flavor. Any suggestions? I would prefer cake, and not brownie recipes, please.

Carrot cake! Oh now I want some!

This is zucchini season, so zucchini quick bread is one. Carrot cake is the obvious standard bearer, but it's great on chocolate cake, cupcakes or brownies, red velvet, apple spice or just spice cake or cookies, pumpkin or squash quickbreads, banana cake, lemon or orange pound cake, cinnamon rolls, or how about the great Southern Hummingbird Cake?

You can vary the flavor of the icing by adding citrus zests and juice, fruit purees, like raspberry or passion fruit, cocoa for chocolate cream cheese icing, ginger, cinnamon, pineapple or toasted coconut.

Cream cheese is my favorite frosting and I can't think of any cake flavor it won't complement but I agree that in summer, hummingbird cake is the sine qua non. Love carrot cake, but I see it as a cool-weather dessert.

I love Trader Joe's (seasonal) Meyer lemon cake mix. I make it with butter and add a cup of shredded sweetened coconut. Then cream cheese frosting with a little vanilla added.

Red Velvet! Not distinct in "flavor" nor that imaginative but it's a classic!

Carrot cake is the winner! I don't care for raisins, so used black walnuts, pineapple, and lots of spice. The house smells great! I agree; I typically think of it as cool weather fare as well, but I live in San Diego, and we are having an unusually cool summer. Thanks for all the replies; that Hummingbird Cake will be next!

Have you ever tried golden raisins (a.k.a. sultana)? I can't stand regular raisins, with their tannic musky taste, but I adore sultanas. They have a more spritely sweet/sour zing and no earthiness.

I'm with you all the way with that. Including in Tagines, I never use black raisins.

                Another vote for sultanas.

gooey cinnamon streusel coffee cake with a gooey cinnamon ripple throughout in addition to streusel topping.

I've never had cream cheese frosting with coffee cake before but that sounds awesome.

I'm a fan of cream cheese frosting on cinnamon rolls. . . too much so, I'm afraid.

                    Spice, Spice, Spice!

My favorite combination is ginger cake or spice cake with cream cheese frosting. Red Velvet - Meh. Second favorite is tart lemon cake with cream cheese, and third would be banana (or hummingbird - a delicious banana spice cake).

                    I am so hungry now.

I just saw someone else recommended hummingbird. Guess you need to make one! I like Emily Lucchetti's recipe.

I know you were looking for cake but.................Skor Bits Bars are fantastic with cream cheese frosting (and more skor bits sprinkled on top). Sooooo easy too: a box of ritz crackers (crushed), 1 can of sweetened condensed milk and most of the skor bits, mix and press in a square baking pan. only 20 min. at 300 - let it cool and frost with the cream cheese, then sprinkle a few more skor bits on top, cut into small squares - they are sooo rich!!!!
