Butcher Class?

I'm interested in a Butchery (and/or Charcuterie) Class/Demonstration. Ideally, like a one-time Saturday morning or something? "Student" participation and "take home the spoils" would be a big plus. Whole hog, sheep, 1/2 steer type of thing would be great. MoCo location ideal, but will travel.

Will any fellow 'hounds please let me know if they hear of anything like this at a shop or a restaurant? Or if any restaurant owners are reading, ...you may want to hike up your insurance premiums and offer such a class.

        Cut in primals then further processed into frenched rack chops, Boneless loin, shanks, butterflied leg, lamb leg steamship, cubed lamb and ground

        $60.00 per guest

        Fabricated Lamb will be offered at a discounted price to all class members afterwards.

        Our classes are limited to 15 guests per class.
