Louisiana Legacy Beignets at Thursday Night Windsor Farmers Market

The Wednesday night Downtown Market in Santa Rosa was my first spotting of the Louisiana Legacy booth. Too full to eat another bite, I asked where else the beignets could be found. Answer: at the owners’ home base of Windsor at the Thursday night farmers market. I grabbed a card and had to chuckle upon reading,

“Rob G. Lippincott Jr., Cajun in Exile since 2004”

He was a cook back home and out here. And, he married the daughter of Costeaux bakery’s owner. This kind of legacy raised my hopes for the beignets. The next night in Windsor I sprang for an order, three beignets for $5, fried on the spot, as shown here.

Lighter and more tender than the other New Orleans style examples available out here. There’s just a bit of chewiness to keep it interesting under the golden, greaseless crust and flurry of powder sugar. Yes, the beignets are all that.

As this is the time of year when folks are looking for New Orleans specialties, I wanted to mention that Louisiana Legacy has a booth this winter at the Saturday morning Santa Rosa Farmers Market.
