The Sergeantsville Inn (in Sergeantsville) has a great game menu and I believe buffalo london broil was on their menu last time I was there. Great historic place too....each room has a theme, ...the tavern room, the library, the wine cellar, etc.

Be careful with WHEN you go to the Sergeantsville Inn - my friend and her family had a horrible experience there after it had a wedding or something on its premises earlier in the day, which threw off the scheduling in the kitchen, I guess. They waited 90 minutes for their food before leaving, with no apologies from management. They're not going back. I was disappointed to hear that, as I had been hoping to give it a try.

Heatherb: Please don't let one bad experience prevent you from going to the Sergeantsville Inn. DH and I have been there many times, and NEVER had a bad meal nor bad service.
Give it a try. I doubt you'll be disappointed. Make a reservation for the Wyeth room or the Library room. Both very charning and oh so romantic.

Clydz in New Brunswick has all kinds of game. Today's dinner menu mentions Pulled Buffalo Short Rib ravioli (starter) and a Grilled Buffalo Hanger Steak (entree). I've had antelope and wild boar there; the food is quite good.

Lambertville Station in Lambertville, natch, (LambertvilleStation.com) sometimes serves buffalo but call, I think it's seasonal there. Try the Readington Buffalo Farm (NJBison.com) for info. The farm & meat store is between Whitehouse and Flemington. You can get your fresh buffalo meat there or have in shipped frozen. Since they supply local restaurants, they might steer you to one.
