help! Bistro recommendation for tomorrow?

First, I really wanted to thank all of you serious contributors to this board. I've mostly been lurking, but you've really enhanced my Parisian experience this last month.

Tomorrow (Monday) is my friend's last day in Paris and we completely forgot to book for dinner. We've been to a lot of great restaurants recommended by all of you on this board, but he's neglected to try what he thinks of as "classic french," often bistro-type food: in particular, he'd like to try escargot, confit de canard, and a soufflet (maybe the escargot is an outlier here?) Does anyone have any recommendations for a bistro or other restaurant, as delicious as possible, where he could try some (all?) of these things? Unfortunately, it's a Monday in the middle of August...!

Also, does anyone know about the Comptoir du Relais? I've heard it's open for dinner still? Do they have a prifixe dinner, or a la carte; if the latter, what is it like? We've been there for lunch, and if we can't find a bistro, we thought it might be an option for tomorrow.

Thanks very much!

Thanks! Is Josephine open? I'll call them in the morning, but I thought I they were closed in August?

They were not last friday. Or last August.

Just what you want (from JT's Paris):
Chez Grenouille closed only the first week of August
52, rue Blanche in the 9th (Metro: Trinite)
      T: 01.42.81.34.07
      Closed Saturday lunch and Sundays
Lunch menus at 15 and 25 and a 40 E carte but they’re cool about mix & matching

This looks great indeed, thanks! Have you or anyone you know tried their soufflet? Worth ordering?

August Monday night with no reservation? Best of luck. May the force be with you.
