Preserving cukes -- but not as pickles?

I have about 10 large cucumbers that I have to do something with -- does anyone have any favorite recipes for putting them up? I don't want to make pickles -- that never works for me (soggy and waaaaayyyyy to salty, even when I follow directions) and these are too big anyway. Any favorite relishes, chutneys, etc? Spicy is good.

    This isn't for preserving but if you want to use some right away, make Agua Fresca! I've used this recipe http://chowhound.chow.com/topics/5471... and it was delicious. There are a bunch more recipes on that thread too.

      Julia Child's baked cucumbers use up a lot as a good-sized cuke makes a single portion. Recipe is online. Lots of other ideas in the current cucumber thread, but certainly a simple salad of thin-sliced cuke with sweet onion, dressed with sweetened white (or rice or rice wine or white wine) vinegar is delicious. Let it macerate for a couple of hours and you won't need to dilute the vinegar.
