I have leftover bun from last night (just the noodles and veggies) without the dressing sauce. What can I turn that into? I really don't want to have bun two nights in a row. Thanks for your help.

or + hot broth for a basic noodle soup.
You could make some salad rolls. Add some meat, wrap up in some rice paper and dip in the dressing sauce. Or you could heat up some chicken broth, add hoisin or oyster sauce and have a nice little noodle soup.
+1 on the soup. Or make a sort of Vietnamese-flavored lo mein by pan-frying.
Stir them up with some eggs, add some extra vegetables if needed and you have a frittata kind of thing.
