A little further away, but I'm sure that Fast & Fresh Deli at 84 Hoyt St between Atlantic Ave. & State St. in Boerum Hill/Downtown Brooklyn. (718) 802-1661 could meet your needs and has had pretty good reviews on CH.

They are a Oaxacan restaurant and they make delicious guacamole, tamales chicken, cheese and pork with mole, fish tacos, chicken moles. Their shrimp ceviche and elotes (corn grilled) are superb. I go every week, they are a husband and wife chef team, lovely people and great authentic food.

I know that Tortilleria Nixtamal also offers catering. I know they offer everything on your list except the rice, beans and corn, but maybe they could work something out for you. Plus, their tortillas can't be beat. Here's a link to more info:

I would fear giving a catering order to Nixtamal unless you don't have a tight timeframe for when/if the food arrives- the concept of time is very different in their kitchen.

Not to be a stick in the mud, but does catered Mexican even work very well? I'd say if the caterers prepare the food in your own kitchen, fine, but can Mexican food work in big trays over canned heat? So much about Mexican food...at least the dishes involving filled tortillas...depends on freshness and getting the prepared food to the table ASAP.

way to ruin my birthday! stick in the mud!! haha jk jk
i had the most amazing spread of mexican food catered on a photo shoot once. which gave me the idea. everything was very fresh and i think most of the meat that goes into tacos gets better the longer it marinates in its own juices ??? and i feel like tacos, beans and rice dont have to always be super hot.
but thank you soo much for the warning. hopefully it goes well.

they ought to be able to provide the items unassembled - you could then heat up the meat etc in your oven or whatever and folks can put together their own plates.
Seems to me it ought to be doable
