Karma Road is great. I'm not a vegetarian, but I thought their food was excellent. Harvest (upstairs in the Water Street Market) is also very good. If you want something quick, Mexicali Blue and The Bakery are great.

My new favorite- Cafe Mio in Gardiner, first town south of New Paltz. They use a lot of local ingredients, have great specials and regular menu and are overall an excellent place for lunch --and breakfast. If headed up to Minnewaska, you can continue up rte. 44-55 and avoid a lot of the weekend traffic in New Paltz. In New Paltz, I like the Harvest Cafe, especially sitting outside with the wonderful view. Also, the Mudd Puddle, downstairs in the Water Street Market has a limited but very good lunch menu and again, its nice for sitting outside.

Walter's Hot Dogs is in Westchester--pretty far from NP. I'm sure you've figured that out by now.

Other places in NP: Hokkaido or Gomen-Kudasai; Main Street Bistro, esp for breakfast, or the Plaza Diner.
