Brickies Tavern on 2nd St. in Reno has the best chicken fried steak I've ever had and the corned beef hash is mighty fine also. They only serve breakfast on weekends so you're in luck. Other CHs have liked it also.

For dinner in Salt Lake, hit the Red Iguana.

JR's in Elko (across from the Red Lion) puts out a mean garlic burger for lunch. The steak sandwich at the Star is also a good bet.

I 80 or Highway 50. You will find more dives on 50. Good luck.

Re "...and the drive to Telluride." I don't know how you are breaking up this trip or when you are planning to travel, but it's about 365 miles from SLC to Telluride -- not easy 365 miles either, especially in winter. The San Juan Range, where Telluride is located, have already gotten a lot of snow.

The OP said dinner in SLC and the ride to Telluride. I think he means overnight in SLC. I hope he does. If he drives to Telluride after dinner he will get there by daylight maybe.
