Thanks all! We ended up just doing plain old peas with butter. Which was unbelievably rich with the stroganoff, so next time I'll just do a salad first then stroganoff. But.. I'm still tempted by the french fries idea.
As for rice instead of egg noodles - I went with what I had on hand, and it was delicious all soaked into the rice. (Husband did express surprise at lack of egg noodles, but either the rice or my raised eyebrow changed his mind, at least temporarily.)

Stroganoff means noodles to me - I'd no more put it over rice than I would meatballs in tomato sauce. I do agree that the vegetable side should be fairly simple. Plain steamed peas or green beans would be my choice. But I expect someone will suggest roasted vegetables or something with a sauce, both of which would compete with the stroganoff.

Since you are going "old school", how about a side of peas with pearl onions and some diced bacon. I remember my mom making that a lot to go with stroganoff.

By the way, in reading some recipes earlier, I noticed a comment by someone living in Russia who said he normally sees stroganoff served over mashed potatoes or french fries. For some reason, serving it over fries has REALLY got my attention. (I've said before, when I go off low-carb, I go OFF of low-carb.)
