Napa in Stamford has a separate room away from the main dining area, it is located near the front as you walk in. Fantastic wine list and I love their food. I've seen what looks to be private parties being held in that room. Right off the I-95 plus the Stamford train station which is also an Amtrak stop. The only negative is you have to pay for parking unless you are lucky enough enough to find a meter spot.
The Ginger Man in Greenwich has a private room upstairs with its own private bar - you go up a lovely spiral staicase. The beer selection is great but the food is inconsistent. Sometimes it's decent/good and other times they are less successful.
Morello in Greenwich has a mezzanine but I can't recommend the place - had a really bad dining experience (poorly cooked food and indifferent/inept service).

It's just over the NY/CT border, so technically NOT in Fairfield County, but check out Rye Bar & Grill. They have at least one private room that I can recall from a recent visit there for a group dinner. The food was pretty good and they seem to have a variety of party options: http://www.ryegrill.com/parties-events

Columbus Park Trattoria in Stamford has a private party room upstairs that can accomodate up to 50 people. There's parking in the downtown municipal garages within a block... and the Italian menu is one of the best in Fairfield Cty. Prices are reasonable.
