I just returned from Sydney, Australia, where I had the most wonderful "basil infused rice pudding, served warm with strawberry & hazelnut salad", at Lucio's in Paddington. In trying to find a recipe for it, I came upon your post. I've made basil ice cream (sweet, not savory), so I knew the combo could work. The rice pudding was rich, creamy and sweet, and was served in a custard cup on a plate. It was quite green and may have even had a few flecks of basil in it. The "salad", served on the plate next to the cup, was composed of strawberries cut in 1/2" to 3/4" pieces, mixed with chopped hazelnuts and basil chiffonade. It was not very sweet. The whole dessert was incredible.
Are you making a savory RP?
I posted some years ago about them, but got no repsonse.
I think basil oil (or use some pesto) might be better in a savory RP, with fresh basil as a garnish, but experimentation is always fun. Try it both ways and have a RP tasting!
What other flavored RP's have you tried?
I've done a prosciutto and fontina RP which tasted good--hard to go wrong with that combination--though I wasn't crazy about the textrue.
