I am looking for a good sharpening service for chef's knives in Grand Junction, CO. Would anyone have recommendations?

Be wary of sharpening services, too many times they use coarse stone grinders that will eventually ruin a fine knife. A much better solution is to buy a "Chef's Choice Sharpener", it has a strop as well as a fine stone. This will give you a super sharp edge that will only need occasional dressing to retain the razor sharpness.
