Leftover smoked pork loin?

Brought some home from a vacation...served it the first night with mashed taters, and the second night in a grilled cheese. Thinking about using it in my usual recipe for smoked chicken chowder but am open to suggestions...?

    Smoked pork loin, called kassler in most of Scandinavia, is a luncheon meat. Should make good Cuban sandwiches too!

        Yep. It makes fine sandwiches indeed. A couple days ago, I thinly sliced the leftover pork, placed it on some good pumpernickle bread and added lettuce, tomato, mayo, and S&P. Tasty as could be.

          also good sliced thin and reheated gently in a skillet with some good bbq sauce -- then mound on a soft potato roll, maybe with some cole slaw on the pork.

            An onion roll, mustard, thinly sliced pork with some dill pickles, and if you have cole slaw, top it with that as well. [A favorite treat my husband had growing up in Southwest Georgia.] A favorite sandwich but we just can't find decent tasting pork loins anymore that we can afford.

            Thanks for all of the ideas! But now I wish that I'd bought more smoked pork :-)
