ISO: Abe & Louie's creamed spinach recipe

I'll paypal you $$ for it! ;)

I tried searching the internet but I kept getting the menu or reviews. I loved this side dish so
much and it did seem pretty simple. I know someone out there must have it! lol

    I make mine, boiled spinach and drain for hours and press out as much water as possible. Make a bechemal sauce with nutmeg salt and pepper. Add spinach to sauce. Put in a baking dish and bake for about 10 minutes till hot and bubbling but not burnt or dried out.

      who in the heck are abe and louie?
      i have the easiest delicious creamed spinach recipe in the world: saute in butter or evoo some minced garlic, shallots, then chopped spinach (you might add a little fresh thyme, and a bit of cayenne pepper). when the onions are translucent, then add a chunk of cream cheese, maybe a little half and half and stir till the cream cheese is melted and it is all well combined. then add some salt to taste and fresh grated nutmeg.

          sounds delicious! cream cheese is good in everything! :D

            i forgot, you maybe need to add a little lemon juice to perk up the flavor -- bring the dish to a brighter flavor.

          I just found 3 recipes for it in a 1970's Joy of Cooking.

          One is a blender recipe and uses sour cream or cream of chicken soup.

          One is blender using milk and butter.

          One uses chicken stock or cream but not the blender.

          Do any of these sound like what you're looking for?

            No blender for sure. The fresh spinach leaves were whole. It was very creamy, but not super thick (like a casserole) but like a super thick soup. That sounds gross, but it's not. lol

                  Don't worry about it. I just started txtng lst yr & im stll hvg probs dropping (see?) ltrs so itz short enuf. :-)

                  And for the OP - I'm afraid you're out of luck - I tried Googling as well, and I don't think the recipe is out there.

                  Have you tried asking at the restaurant? Or writing into a magazine's "ask for the recipe" column? I know one food mag used to have it - probably Gourmet, which means you're outta luck.

                    No, I haven't asked them yet. I didn't think they would, but I guess I can try. Maybe Gourmet might have it in the archives, if they're still around.
