Trying to get into beans - what's recommended from Rancho Gordo?

I'm trying to sneak more carbs into my diet (I'm very physically active but have a hard time digesting starch, and one can only tolerate so much sugar). I figure beans are a good way to start. I'm thinking I should try Rancho Gordo's stuff to see if I'm missing out anything - what are your favorites from them?

Rancho Gordo is a star - - I tried 6 and all are great, with distinct flavors.

That said, there are a bunch of wonderful beans that don't cost $5 a pound (ridiculous), so while you explore RG, you should also head to the bulk food section of a specialty store and explore what costs .79 a pound...and while you're at it, try lentils and sprouted mung beans too.

I've had a few types of their beans and they were all excellent. I would highly recommend any of them. I also feel that beans made well of most any type are good. The way we make them here is to soak them for a few hours and change the water every hour or so. Then after soaking put them in a pot with a ham hock and a rough chopped onion (1 whole) and then cook for a couple of hours. Add salt at the end and that's it. Making them in the crock pot is very easy too. Can't believe I didn't make these until someone showed me how. I just made a great black bean soup and it was sooo easy. Good luck.
