Let's talk egg salad alternatives
I'm interested in two less than desirable forms of egg salad: egg white salad and tofu egg salad. The former has a few recipes out on crazy dieting websites. The latter has a few recipes found on crazy vegan sites. I trust neither of these demographics. I trust Chow.
I'm interested in sucking down a lot of cold protein on the cheap. Full fat egg salad makes me feel a little queasy in volume. I've had egg white salad from the deli case at Trader Joes, but it kind of left me cold - more like chopped egg whites, bland, not really bound together. By contrast, I'm addicted to a local product called Toby's Tofu Pate, a egg salady mix of tofu, mayo, jalapeno, and the usual suspects. I go through a pint of this stuff in one sitting as a midnight snack. It's crack. It's also expensive.
So, those of who with a more balanced perspective on appealing egg salads - do you have any good recipes for these alternatives? I'd be much obliged.
I have made this recipe many times, and I can't figure out why it tastes exactly like egg salad, but it does. I've even fed it so some family members who turn up their noses at tofu. It is from Tyler Florence when he was doing Food 911 several years ago--he was helping a woman who needed to provide some meals for vegetarian roommates.
not a recipe because i wing it every time, but some tips:
- instead of mayo, make a dressing of mashed avocado, low-fat buttermilk & Dijon mustard.
- add some finely grated lemon zest (instead of juice) - great flavor without the watery factor.
- add some sort of finely chopped onion (chives, scallions, shallot, red onion...)
- pimenton de la vera and cayenne for smokiness & heat...i even like to stir in a little adobo sauce from canned chipotles.
