What is this egg cooking technique?

I saw it briefly in a restaurant scene on the TV show Torchwood, so I presume it's a common English method of cooking eggs. Anyway, there was what appeared to be a stainless steel flattop covered in about an inch of a clear liquid (I can't tell if it was water or oil). The eggs were in full contact with the flattop, the same way you would if frying them, but they were submerged underneath the liquid. The flattop was uncovered. It's not quite poaching and it's not quite frying.

Possibly a braised egg. I usually spray a frying pan with cooking spray, add the egg and when it is almost set, then add a tablespoon or so of water per egg. Cover briefly with the pan lid.

Interesting. I usually think of basting as putting a small amount of cooking fat atop the egg to cook the upward-facing side, not full-on submerging it in oil (I'm presuming the liquid is oil of some kind) like you were deep-frying it.
