I have kale and collards, need to do something with them for a potluck ASAP
I'm supposed to bring a side to a potluck tomorrow - they'll be grilling, but not southern style BBQ. I don't have that much of either, but they've been in the fridge for a week and I'd like to get rid of them. The kale isn't firm enough to shred for a salad. What would you recommend doing with these?

cut out the tough stems and rough chop/shred the leaves into 1" or smaller pieces. mix collards and kale, then blanch the greens for just a minute or 2 in salted boiling water and immediately shock w cold water to stop cooking and for maximum color pop. drain very well, place in serving bowl. heat 1/4 cup of sesame oil in a skillet, add a tbsp of minced garlic and a small handful of sesame seeds. stir and toast sesame seeds until fragrant and the garlic is soft. remove from heat, add 1/8 cup soy sauce or tamari to the hot skillet and carefully pour the dressing over the greens. toss with tongs to evenly distribute the dressing. can be served cold or at room temp.
