Side dish rec's for grilled strip steaks w/chimichurri

I'm trying to go with an Argentinian theme for the 4th at our place... We'll be grilling strip steaks with chimichurri and pairing with a malbec or maybe something else... Any ideas for sides? We'll have room on the grill, and also have a smoker box.

  1. From a parilla travelog:

"The waiter nodded and scurried away. I studied Parrilla Peña’s menu. In addition every cut of meat imaginable (from fillet and sirloin to sweetbreads, kidneys, and tripe), they offered homemade pastas, plates of local cheese and roasted vegetables, salads, milanesas (breaded veal cutlets), empanadas, and blood sausage."

I'm not sure I'd want much more than bread.

    1. If you want to go Argentine, then serve with white rice and a simple salad with onions and tomatoes. It sounds too easy, but it's authentic and really lets the steaks/sauce take center stage.

      1. Okay, not authentic, but this salad (minus the tuna) has become one of our favorites with anything that comes off the grill.

        1. My ex is from Argentina and whenever we had asado it was mostly meat--beef, chicken, sweetbreads, intestines. We always started with grilled Italian sausage on crusty bread with some chimichurri. Sometimes we would have sliced tomatoes dressed with oil and tons of garlic whirred up in the blender. Another favorite was boiled little red potatoes with the same garlic dressing with lots of cilantro added. Don't forget lots of bread.
