Burgers for July 4th
What are your favorite burgers to grill for the 4th? And where do you buy them?
My favorite burgers start with my picking an unusual whole cut of meat and having it ground, preferably just once. I've had whole briskets ground; flank steak is wonderful. When you start with freshly ground beef, chop gently with soaked bread and egg to bind, plus a little salt and pepper it's s different experience altogether.
I buy my meat (ground chuck) from Joe's Market in Ardsley. A family run shop where they grind there own meat. An old time butcher shop/grocery. I buy my veal bones from them when I'm making stock.
