        This is a noble and worthwhile endeavor. I registered just to contribute. :)

        Asian - http://www.cheftomm.com/
        I got here looking for potsticker instruction videos. Dude seems to be trying to be the next Alton Brown. Videos have good production value.

        Chinese (very authentic) http://yeqiang.com
        Videos are in English, site is in Chinese. check out the English youtube channel. I think this lady stole my mom's recipe book. I can't give higher praise than that. ;

        )

        Viet / Asian / Misc http://howcookingworks.com/long-recipes/
        I got here researching pho, followed their long pho recipe and was very successful. They don't have many recipes, but videos are very well thought out, and they take an analytical approach, which is right up my alley.

        Here is a bonus, non-v log. cookingforengineers.com. If you have an analytical mind and enjoy seeing very nerdy things related to cooking, you must go there.

        Thanks for sharing this list. I just checked out el cocinero fiel and ver y cocinar. I've already found a couple recipes I'd like to try.
