Where can I find "farm to table," humanely raised and SUPER good restaurants in Quebec City?

Hi, I'm Patty, am new to this Board, and I would appreciate your help.
For the last two years, I have tried to eat only food grown on family farms and humanely raised. (I won't go into all my ethical reasons, but I think it's also important to note that as a former asthmatic, I no longer suffer from pneumonia every year as a bonus :) Anyway, my husband and I be staying in QC for six nights. We absolutely love to eat great food, are food adventurous (except for one exception---sea urchin) and price is not a huge consideration. Love Mom and Pops, with Pops or Mom in the kitchen type places. Can you help? Merci beaucoup!
