ISO roasted tomato soup recipe

Apologies if this has been posted before, but the search option on Ch is not working for me.

I'm looking for a recipe for a drop-dead-good tomato soup, preferably with roasted tomatoes. A friend is the soup stop on a progressive fund-raiser. Soup, salad, finger sandwiches, dessert -- sort of a faux tea thing, with pots of tea being the common thread. She wants to do a meat, vegetarian, and a fish. Last year, the first year, soup options were butternut squash or Italian wedding. She wants to ramp it up to three soups. I question this decision of three. Comments?

We've discussed vegan issues, and she's pretty sure she won't have to go totally vegan for the vegetable soup. She's considering broccoli, but even better likes my idea of a tomato soup with a mini grilled cheese sandwich as the bread/cracker accompaniment. This will be the first Sunday in October, so tomato season is over. Should we use local, in-season tomatoes and roast, puree, freeze ahead -- or use roasted, canned the day or two before?

Also, any suggestions for the meat and fish are totally welcomed. I suggested a minestrone with spinach/chicken mini meatballs, and a rich chicken broth with shrimp dumplings. She's also considering clam chowder.

Thanks for your thoughts.

Thank you, both, especially for the links.

Would your friend consider canning some tomato soup? (It's easy!) The Ball Canning site has a teriffic recipe for creamy tomato soup. Sorry, I dont' seem to be able to set a link.

Depending on your location, you should still be able to get decent tomatoes through October, but roasting, pureeing and freezing summer's bounty is always a nice idea. There are quite good brands of canned fire roasted tomatoes on the market, Muir Glen brand comes to mind, but they can be pricy. Roasting previouly canned tomatoes really doesn't work very well, but a little roasted fresh flavor in tomato soup goes far; you may be able to augment your roasted tomato soup with a canned tomato product. For a tomato choice, plum tomatoes are a great option for roasting, and you should still be able to get them readily in October.

I like the clam chowder suggestion, as long as it's relatively authentic, and the minestrone options you mentioned. I don't know what the fund raiser situation is, but the more soup around, the happier I am.
