Angelo's Fried Eggplant
Hi, NYC 'hounds! I'm from Maryland and visited NYC last summer. My family went to Angelo's pizza in Times Square one evening for dinner and *loved* their fried eggplant and zucchini. My daughter scarfed these down like they were potato chips. We've been trying to recreate them ever since, with varying degrees of success. It seems the farther we get from the trip, the harder our experiment becomes.
We're having a "fry night" on Friday to celebrate the end of school and we plan to victimize another eggplant. I was wondering if any of you knew how Angelo's was made or maybe had thoughts on the technique.
