Hello! Trying to replicate a great dish I had at Crooks Corner and need pickled pork. Never seen nor noticed such a product. Don't even know where to start.

Or you could just use a piece of "sidemeat" (fatback) and throw a dash of vinegar into your greens.
You just haven't noticed it....just about any Southern grocery will have it.
I am assuming you need a pigs foot, you can get it at many grocery stores and convenience stores. Just ask and ye shall find
