Best Sushi Value on the Strip

I'm going to be in Vegas on the budget at the end of this month, and would like Sushi one evening. Where is the best value on the strip? It can include happy hours, or coupons, or discounted gift certificates etc. I'd like to target food for two avg eater to be $50-$60.
