I like Capriotti in Beverly Hills on Wilshire near Bedford. Not a sub shop per se but Mendocino Farms in the Waterside Shopping Center in MDR has some very good sandwiches (and the soda fountain serves Boylan brand sodas made with real cane sugar), as do Earlz Gourmet Grub and Curious Palate on Venice near Grand View. I have also heard that Sacramento's Sandwich Spot will be opening soon on Ocean Park near 31st.

Soda Pops is legions ahead of Victor Jrs in terms of flavor, but Victor Jrs is technically a pizza place not a sub shop. Victor Jrs and Dagwoods (also a pizza place) are much more in the same league. But again, that style of sub can sometimes hit the spot, especially if you are tired of Bay Cities.

West LA? Heck, *all* of LA is sorely lacking in quality subs. Not sandwiches, but *subs*. Yes, I know, there are a few, but not many.
I've been frequenting Soda Pops a lot recently, right by the Beverly Center. Probably doesn't qualify as the area you're looking for.
Victor Jrs in Culver City isn't horrible. Meatball is probably the highlight.
West of the 405, the only place I can think of is Dagwoods, which actually does have a few decent subs. Not amazing, but hits the spot from time to time.
