Check out the Guilt Restaurant bar food menu at the Palace Hotel at Madison & 50th. Amazing yellow fin tuna tartare! Also love the truffle fries. The marvelous patio is the place to enjoy their limited but delicious bar menu. The Guilt bar inside the hotel however, is a real bore - dumb pounding muzak, an underwhelming, ridiculous geometrical set piece and buzz-kill blue lighting clash big-time with the otherwise very beautiful, original historic room.

I LOVE tuna tartare and have had it all over the city, including many of the places people have mentioned like Nougatine, Gotham, the Modern, and Daniel...not room service though. Out of all of those, the most memorable by far is Gotham. The portion is gigantic, and it has a subtle asian inspiration with really thinly sliced cucumbers that let the flavor of the tuna really shine through. It's simple, cracked pepper and coarse salt, and DELICIOUS. We go there specifically for the tuna tartare because we're not the biggest fans of the main courses on the menu. The tartare at Nougatine was good but standard and once we got it still frozen on the inside, the tartare at David was also good but I think we got it as part of the tasting menu so it was really expensive, and the Modern was good, but I didn't like the celery they had on the bottom...it kind of gave it a bland flavor overall. Go with Gotham!!!

I second the Upside Down Tuna Tarte at the Modern Bar Room. I had it this past Monday and it was fabulous. Great contrast of the brittle, slightly sweet pastry on top, the Japanese cucumber and the aioli sauce. The portion size was fairly substantial with plenty of beautiful red tuna cubes.

You will not believe me, but there is a Thai restaurant...one in Hell's Kitchen and one in Chelsea....that has the BEST tuna tartare I have ever had. OMG!

I second Nougatine (casual side of Jean George). The quality, portion and taste are all solid. Another one I had recently at Punch, by Union Square, was also quite good; nice, bright yuzu dressing.
