Traveling to Perce (Gaspesie) via Rimouski and St. Hyacinthe

We are traveling around the Gaspe Peninsula starting near St. Hyacinthe, then off to Rimouski, and then to Perce. Any recommendations for must stops along the way for provisions and a great place to eat in any or all of these three locations. We're not picky - we prefer fresh and local and seafood/fish. Thanks.

Well, if they like to make desserts there is always the chocolate academy:

Does anyone know whether cocoa barry in st-hyacinthe is open for visits(other than the academy)?

I would also like to know if there are any gems. My parents are driving around the penninsula in a few weeks and would like some recommendations about where to stop to eat.
