leftover chicken - what's your favorite way to use it?
Hi all,
I'm looking for some new ways to use up leftover chicken. I found a yummy looking recipe that I'm definitely going to try (link below), but was wondering what other suggestions are out there?

I like using in chicken salad. I also use it in pasta salad to bring to work for lunch or with pasta and veggies. Not very original I know.

any of a thousand soups calling for shredded chicken -- chicken posole or tortilla soup, chicken and noodles/dumplings, chicken and corn chowder, etc etc.
creamed chicken or chicken a la king over biscuits
enchiladas
samosas, dumplings, turnovers, meat pies, egg rolls

Tonight I'm making the following recipe with left over roast chicken from Sunday's dinner. It's an Arthur Schwartz recipe and as usual a long but interesting intro essay preceeds it but the dish is delicious,,,:

Shredded onto a green salad with whatever greens and vegetables look best, balsamic vinaigrette, sliced toasted almonds, and smoked gouda.

I always shred my leftover chicken and keep it in the freezer. it's great for things like eEnchilada/taco type things, or to throw into soup/porridge/oatmeal.

Thanks everyone. I'm just so tired of the usual enchiladas, soup, etc. and these are some great suggestions. The chicken salad sounds esp good since it's been so hot lately. I'm going to make a chinese chicken salad and the buffalo chicken sammies tomorrow.

My chicken leftovers usually end up as taco filling (fry meat bits with a chopped onion, taco seasonings, maybe a chile or two) or asian salad (broken up ramen noodles, lots of green onions, slivered almonds, toasted sesame seeds, slivered jalapenos and carrots).

No, I just use cooked celophane noodles, chilled, dice the chicken, mix w/ kim chi, maybe add some seseme oil or top w/ gochuchang (red chile paste).

I have two favorite ways I use leftover chicken. One is a recipe for Indian Butter Chicken that is quick, easy, and total comfort food. The other is Rachel Ray's (I know, perish the thought) Drunken Risotto which takes more time but is creamy and, again, total comfort food.

Let me count the ways..
Chicken salad, quite a few different variations
Enchiladas, chicken and cheese, spinach, chicken and cheese
Quesadillas with black olives, cheese, chicken, and peppers
Grilled BBQ chicken and cheese sandwiches - on hearty rolls, with fontina cheese, dip into bbq sauce - Toast or grill the bun, add your cheese then melt that with the chicken under a flame or broiler. Add bbq sauce, and peppers, great served warm- sort of like Quizno's
Roast chicken and gravy, diner sandwiches, cranvberry sauce, with mashed potatoes or quick stuffing ( We love this in the cooler months)
Chicken and noodle soup, matzo ball soup, Italian minestroni soup with lima beans, carrots, greens, tiny pasta chicken, broth and tomatoes.
Club sandwiches with bacon, tomato, roast chicken , lettuce, and mayo.
And so many salads, I like to make them using ingredients that are Asian,Greek, or make a Cobb salad. Such a treat, and really we gon't tire of it. We love to use roast chicken.

Mikey's Tetrazzini recipe is the one he cooked for our Mom Food Extravaganza a couple of years ago, and I've cooked it several times since. SOOOO-perb and highly recommended. I'll happily cook a chicken just to make this.

A little added to Deviled Egg yolk filling with tarragon and a little lemon and minced (roasted or raw) garlic
With gravy over waffles
BBQ Chicken Pizza - even on english muffins with gouda, mozzarella, parsley and onion
Croquettes

I just made some divine chicken salad with fresh tarragon, walnuts and raisins. The trick is homeade mayonnaise and also, put some olive oil, salt and pepper on the chicken and let it sit overnight.
