Gluten Free Comfort Food

I have guests who just traveled cross country and the little one is g/f. I'm short on time and working today and tomorrow so I'm desperate for ideas. Just want to make them a nice, homey meal and of course all I can think of is stuff like baked ziti, baked stuffed shells, lasagna....

    Mashed potatoes and baked chicken. Use cornmeal or sesame seeds to coat it instead of flour. Ice cream for dessert.

      Second roast chicken and mashed potatoes! Or Edna Lewis's chicken and rice- don't have the recipe on me, but this blog outlines the basic steps:

      Alternatives:
      Shrimp and grits.
      Shepard's pie
      Chicken and rice soup (or chicken and vegetable soup
      )Beef stew (brown meat without flour, and thicken with cornstarch)

        if Mexican is okay, Enchiladas with Corn Tortillas

        Meatloaf - use almond meal to bind or cornmeal and Mashed Potatoes

        Chili

        Polenta with Ragu or
        Polenta Lasagna

        Bunless Burgers with Baked Potato Wedges or Yam Wedges

        Tuna Melt on GF bread

        Rice Pudding for dessert
        or
        Flourless Chocolate Torte

        ...just a few ways to go IMO

          I know that your "tomorrow" is now "today", but there's nothing more comforting than a roast (of choice) with potatoes, carrots, onions.... lots of gravy and a big bowl of rice on the side.

            Found out the little cutie hates chicken (he says he is 'vegetarian to chicken' !!)
            Un-bunned burgers, baked oven fries, and I think she said he likes corn. I'll figure out a way to get green in there, somehow...
            Ooooh Polenta- great idea!
