without any egg wash on burger buns of Nancy Silverton???
hey! there is a recipe by nancy silverton about her burger buns.

in here, there is no egg wash instruction. but unlike other recipes of burger buns, she suggest to bake buns with ices in heated oven.
so i wonder if adding ices while baking burger buns may or may not result in creating more brown colour on the buns like the baked colour after egg wash?
could anyone give me some infos?
