Rice roll in XO sauce at Asia Pearl

One of my favorite dishes lately is the Rice roll in XO sauce at Asia Pearl restaurant at the 99 Ranch market mall in Richmond. This dish is different than the more common variation where the noodles are rolled up. We have been going to Asia Pearl for Dim Sum on a regular basis and the food has been consistently good. The rice roll in XO sauce is really delicious. It’s made with wide rice noodles that are fried on one side, so that one side of the noodle is kind of crunchy and the other side is smooth and chewy. It’s topped with a spicy mixture made with chilies, pork and dried shrimp. The combination of flavors and textures is amazing. It’s served with a side plate of sweet dipping sauce but I think it’s much better without the sauce. This dish does not come around very often in the Dim Sum rotation but I recommend ordering it if you go to Asia Pearl for Dim Sum.
