Where to buy a cow's head? Organ meats?
Greetings hounds!
I'm leading a dissection with a group of students and I was hoping you could suggest a butcher in (preferably lower) Manhattan who might have animal heads in stock?
A few years ago, a kind butcher at a Halal slaughter house donated some sheep eyes from a whole animal head for dissection. This time around, I can pay for the eyes, heart etc... but don't know where to look. Do you have any suggestions for a butcher with animal heads in stock? (For cabeza de vaca, cabeza de cabral perhaps...)

Answer to my own question: The Essex Street Market! Bouth Jeffrey's Meats and Lois Meats have been amazing! I had a less thrilling experience at Western Beef, they're good for pre-packaged organs (kidneys specifically), but no heads, the only hearts came pre quartered, and the lines were long. They didn't hold a candle to the great people and personal service at Essex Street Market. They're the best!

Slightly off the subject, but I was under the impression that Jeffrey's had closed. Last time I was there I couldn't find it; it looked like Lois Meats had taken over the space. Am I just imagining things here and/or gone blind?

Halal butcher shops often have sheep heads along with offal. I would suggest checking out the options on Lexington. Butcher shops in Chinatown often have pork offal and occasionally pig heads.
