Mostarda Recipe

I searched for a mostarda recipe on CH and did not find one. So here is an excellent link to this rather extensive labor of love:

          It is something to contemplate. When or if you do make it, let us know how it works out. I''ve only ever bought it.

          The problem is getting the right acid balance with just wine, fruit, sugar, and unprepared mustard. Once the mixture starts to cook, see if it might need some white wine or champagne vinegar or even some Dijon mustard. Personally, I don't like it overly sweet.
