Looking for the best wine and food pairings.

Are there restaurants, apart from Adour, which design their dishes based on the wine which will be served? I'm basically looking for the NYC equivalent to Senderens. It could be any style restaurant and I'm open to beer, sake or any other drink pairings.

    Recently had the pre-fixe lunch at Tocquvelle with the optional wine pairing for each of the 3 courses. At $24 lunch & $15 for the wine pairings (3 oz pours), it was quite a bargain for a meal of such high caliber.

      If I have understood the OP corectly, he/she is looking for a restaurant where the pairings are the focus. This is why I recommended Veritas.

        I'm not sure they "design their dishes based on the wine" but Veritas is a very good choice for what you're looking for in terms of expert pairings and good food to match.
