It should be fine...esp. being refrigerated. It's just a simple sugar. As long as there is no mold or scary smell, I would use it. I don't even keep mine in the fridge and it's at least 2-3 years old!! adam

The beauty of stuff with a ton of sugar in it (i.e. molasses) is that it creates crazy osmotic pressure, which is science-talk for, "nothing-can-grow-in-it". It's actually got too much sugar in it to allow growth. Basically, molasses can't go bad, except under slightly shorter than geological timelines. My folks used to keep it around for *years* without it going bad.

Will molasses crystallize a la honey?

No. Honey crystallizes because there is small amounts of beeswax dissolved in the honey. Molasses has no such problem.

I've had some 4 months past the expiration date, was fine, a slight fermented background flavor, but still completely usable. It should be in even better condition if it was refrigerated.
