how closely should the pan and burner diameters match?


I'm thinking about getting a new saute pan because my current 3 qt one is a bit small and I tend to end up overfilling it. The current one is 9.5 inches across the base which fits my stovetop exactly. If I get one that is 11 inches in diameter, am I going to notice a big difference in the heating around the edge where the pan isn't directly over the burner, if I go with something like copper or aluminium?

  1. Since you mention size this must be electric. If you use copper or thick aluminium then you will notice little difference.

    To test my assertion try using your current pan on a smaller burner and compare it to a smaller pan on the same burner.
