coconut custard? what to top it with?

Heya, I am making a coconut custard pie and I want to top it with a fresh fruit.. What do you think goes well with coconut? any suggestions? anina

  1. Pineapple compote, the slight sour tang would contrast the richness.
    Or just diced pineapple for that matter.

      andrew, you are brilliant... My pie is sitting here for guests tomorrow night and wait till I get the pineapple on there.. I was thinking strawberry but that seemed far too mundane.. I think the Thai might do this combo.. Anyway thanks so much! anina

          The post below by bushwickgirl contains the recipe I used and the topic where I got the idea from. I would start with a little less sugar. The leftover pulp after straining can be pureed with a spoon or two of mustard to make a rather interesting savory condiment.

            Nice idea for using the leftover pulp, and nice to hear from a poster that tried it.

            I meant to mention that using seltzer, or even a flavored seltzer, as the sparkling water base in the soda would be just fine, in lieu of Pellegrino.

      2. In case you don't go with pineapple, I think mango or raspberry sauce would be equally good!

          My thoughts as well.

          Readytoslurp, you should consider posting a separate query for rhubarb soda making ideas, although I bet there's some suggestions on the numerous rhubarb threads for concocting that beverage. Sounds refreshing.

        2. mango! i like pineapple, too, but the mango is more unexpected. what is the rest of your menu? on the other hand, i don't know of any ripe mangoes now, but those deliciously sweet gold pineapples are always available.

                No I didn't, and it might have been a better thing since she's playing my song! Did you see the recipe for the tunnel of love cake from King Arthur Flour that I linked to a while back. I'm a complete slave to coconut!
