You could go to Original Joe's in downtown SJ. It's mid-century-Sinatra-type pasta-chops-martinis. It has its own charm. If this is dinner after something else it's fine. If it's the only thing, probably not. Open until 1 a.m.

Doesn't appear to be much that's open on Mondays past 10:00. There are some places available for 10:00 pm seating on opentable although their websites say they close at 10.
Your best is probably going to be the VBar at the Hotel Valencia in Santana Row (not sure how long the restaurant Citrus is open). Hyatt Santa Clara has the Evolution Cafe & Bar open 'til midnight daily. Lastly, it appears there is the new "underwater concept" Tanq Bar open at the San Jose Marriott.; however, hours aren't listed on its website (ugh, why NOT?).

Sumiya Yakitori (grill) in Santa Clara on Homestead is open until 11:30 pm Mon-Sat. The food is really good, it's a nice looking place, and it's usually crowded, loud, and friendly.
The grilled items are their speciality, not the traditional Japanese dushes. You can share lot of small plates

In Sunnyvale, Id recommend Tarragon. Romantic and good food/price ratio.
In San Jose, I might recommend the much maligned Santana Row. Plenty of distractions if there are any lulls in conversation and if dinner goes well, good excuse to walk around together.... At SR, Citrus at the Valencia or Straits would be good "date" options IMO

As far as I can tell, Straits is open until last call (whenever that officially is around here). It actually becomes a really loud bar/lounge/dance club at around 10PM-ish. There is also a Parisian-esque bakery next to Straits that may be a quieter option for dessert. The pastries look better than they taste and the coffee is potable, but it's a good place for people watching and a much better venue for conversation than Straits may be. Did I mention that Straits is LOUD?
