healthy side for oven fried chicken, biscuits and gravy
I'm totally drawing a blank -other than a boring greens salad. I'd love something that highlights spring veggies if possible
Asparagus and artichokes are classic spring vegetables, quickly steamed and served cold with a heavy-on-the-lemon, light-on-the-butter sauce.
I second the asparagus; I had some yesterday which I pan sauteed in a tiny bit of olive oil & lemon..a little black pepper and both my dog & I tore them up! Other nice veggies appearing in the markets these days are fresh green beans which would be nice cooked up with red potatoes or some fresh tomato, a little chopped garlic & oil. I'm southern so any kind of collards, mustard greens, kale, cabbage would work for me as well as okra
Roasted beets are easy, and haven't reached their climax yet. And there is a lot of talk about rhubarb lately, which can be prepared as a savory dish.
Other than that, when I think of fried chicken, I think of my grandmother and her lovely garden: green beans and lightly salted tomato slices were always on the table with the chicken and biscuits. I love lightly steamed green beans. I don't even season mine. I even went so far to have an enormous bowl of them for dinner one night when I was on my own.
