So far I've had baguettes from three purveyors in Toronto that have excellent mie (crumb or dough) and crust: Chabichou (affiliated with Tati Bistro). Première Moisson (available at Metro stores in the GTA but probably shipped frozen and unbaked from Montreal), and Baguette Co. (picked up today from Fiesta Farms). Ace Bakery did make a creditable baguette a while back but quality has slipped over the past couple of years. Any other baguettes that compare to the three I like?

Of the three baguettes you've mentioned that you like, I've only tasted the one from Baguette Co - it makes several baguette styles, of which the one I liked most was the ciabatta). So I think you might also enjoy the baguette put out by Stonemill Bakery, in the basement of the south St. Lawrence Market. I pick it up first thing Saturday morning, when they're always fresh-baked. Crustily delicious. Pay attention to the instructions on the bag for reheating when you get it home, and you'll enjoy it at its peak. Price: $2.69 last time I bought it. Like most baguettes, though, its prime taste doesn't last all that long.
