Funny...for years we have been sending our rice fields mud bugs to NOLA...but the bug has turned (aaargh). Too bad local folks can't get any local crawdads.

I wish we had more of a history of eating them here so I could get them more cheaply or more easily than making a trek up to Isleton. I remember catching them by the bucketful as child, but even then my parents had to drive us aways for best harvesting.
I know the NOLA people talk about the superior flavor of theirs, but I much prefer the larger size of the (yes, invasive) Sacto ones. After all, after boiling them in Cajun spices, is the difference in flavor really all that apparent?
