Best serious vegeterian in Vegas please?
Whole menu does not have to be 100% Veg.
On the Strip, Sage has some very nice vegetarian options and I believe Alex may be doing a vegetarian tasting menu.
One of the best lunches I've ever had was the Heirloom Tomato "Napoleon" at Olives in The Bellagio. I can still taste it:) Lots of good options there.

A strong second on both Sage and Alex, and also on the strip there is a vegetarian tasting menu at Fleur de Lys (Mandalay Bay), while both of the Batali properties at the Venetian, B&B and Enoteca San Marco, bring some quality options. B&B is doing a "Meatless Monday" promotion right now that focuses even more on vegetarian options on that particular evening.
Not sure if this counts as 'serious' enough, but my husband and I are both vegetarians and our evening of tapas at Firefly at 3900 Paradise, was our favorite meal on a recent trip to Las Vegas.
Sangria was very good and there was a broad offering of tasties without meat.
We have been repeatedly disapointed at Enoteca San Marcos and vowed to give up trying after this trip. Lavo, in the Palazzo/Venetian had several vegetarian options. We really liked the pizza, but the servings are huge.
